Started in March 2016 in a small kitchen and in November 2016 moved to their current location in Christchurch after outgrowing two premises. Now thats what I call impressive!!!

I was given a tour of the bakery and got to see the process from mix to cooling ready for packing. Its the first time I’ve ever had to go into a kitchen with full on protective gear. Definitely rocked the hair net!! Firstly the ingredients mixed by a massive industrial mixer. Once ready rolled by hand and put into tins. These are then baked. Once baked they are taken out and cut by hand then placed back into another cooker for their second bake. Lastly they are stored on racks to cool ready for the packaging process.



These biscotti are thin compared to the original Italian version, making it easier to eat and less painful on those nashers.
With 20 flavours on the menu this small group of bakers have their stock in Farm shops, Deli’s and the famous Chewton Glenn hotel. They are now starting to ship out to Canada, America and Hong Kong.
