Since going Pumpkin picking for the first time this year at Sopley Farm, I’d been thinking of things to make with the pumpkin guts once I’d craved my master piece. Soup would normally be a go to for this time of year, but you can’t do that with the squishy pulp and I wasn’t sacrificing not craving a pumpkin as it was Halloween this week after all!!


While craving away and coming up with a standard halloween face for my pumpkin I decided I’d make a Pumpkin Pie. Only I didn’t realise just how hard it’ll be to separate all the seeds (which I roasted and enjoyed with a gin!) from the pumpkin pulp. It was wet a squishy and just unpleasant, but I was determined I was using this in my pie!!


To make this recipe and use your unwanted pumpkin inners like me follow this recipe!
- 1 egg
- 1/2 cup of caster sugar
- Tsp ground cinnamon
- Tsp ground nutmeg
- Tsp ground cloves
- 1/2 tsp fresh grated ginger
- 1/2 tsp sea salt
- Fresh pumpkin pulp – strained
- 1 can condensed milk
- Ready made shortcrust pastry
- Deep round pie tin
Preheat the oven to 220 degrees. Grease your pie tin with oil or melted butter. Prep your pastry as per the packaging. Roll out pastry and lay in your pie tin. Beat your egg and then add all remaining ingredients into a bowl. Either using a hand blender or a standing blender, blend all ingredients together until a smooth paste, this maybe slightly running, but dont worry. Pour mixture into your pastry lined tin. Bake for 15 minutes at 220 degrees. Reduce heat to 180 degress and continue baking for another 40 to 50 minutes. Take out of oven and let the pie cool completely before getting stuck in.


I’ll let you into a little secret. I hate custard tart and the fact this is made similar freaked me out. After plucking up the courage to try a bit of my creation I have fallen in love with it and will now be making this again next year after my newly found yearly pumpkin picking tradition.
